Combine sugar and water in saucepan.
Cook over medium heat to 270° to 290° on candy thermometer, soft crack stage; remove from heat.
Pour over egg whites.
Beat well.
May add mashed bananas for banana cake, drained crushed pineapple for pineapple cake, coconut for coconut cake and chopped pecans for pecan cake. Yield:
