Frog Eyed Salad
Frog Eyed Salad is an moderately easy dinner. Made with 1/2 box acini de pepe (uncooked), 1/2 c. sugar, 1/4 tsp. salt, 1 can fruit cocktail and 1 c. mini marshmallows, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook Acini De Pepe.
In heavy saucepan, beat egg with wire whisk until foamy.
Stir in sugar, flour, salt and reserved pineapple juice.
Over low heat, cook and stir until thickened and bubbly.
In a large bowl, combine Acini De Pepe with egg mixture. Chill thoroughly, about 1 hour.
Stir in pineapple, fruit cocktail and marshmallows.
Fold in whipped cream. Cover and chill.
Stir before serving.
