Fritata
Fritata is an moderately easy dinner. Made with 2 jars marinated artichoke hearts, 1 small onion, chopped, 1 clove garlic, mashed, 4 eggs and 1/4 c. bread crumbs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Drain juice from one artichoke jar into frying pan.
Chop both jars of artichokes and set aside.
Saute onion and garlic in frying pan of marinade.
Beat eggs.
Add bread crumbs, salt, pepper, oregano and Tabasco.
Stir in cheese, parsley and artichokes.
Add onion mixture.
Put in 7 x 11-inch greased pan. Bake at 325Β° for 30 minutes.
