Fried Trout
Fried Trout is an moderately easy dinner. Made with 6 small brook trout, 2 tsp. onion pulp, 4 tbsp. lime juice, 1/2 tsp. salt and 4 to 6 egg whites, beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut onion across; scrape off pulp.
Mix with lemon juice and salt.
Marinate fish thoroughly.
Make batter of egg whites, wine, sugar, salt, cayenne and ginger.
Beat as stiff as possible.
Roll fish carefully in batter.
Saute in butter 6 minutes on each side on low heat in skillet.
