Fried Squash
Fried Squash is an moderately easy dinner. Made with 8 c. yellow squash, 1 stick butter or margarine, 2 beaten eggs, 1 chopped onion and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook squash in water until tender; add butter, salt, pepper and chopped onion.
Cook on top of stove in skillet until liquid is reduced, being careful not to burn.
Remove from heat and cool. Add beaten eggs.
Return to heat to thicken.
Remove from heat and serve.
