Fried Rice
Fried Rice is an moderately easy dinner. Made with 3 c. cooked, cold rice (use regular brown or white rice or instant), 3 green onions, sliced, 2 eggs, beaten, 1 c. frozen peas and carrots, thawed and 1/3 c. chopped, cooked chicken, meat or fish (optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat 2 tablespoons oil in skillet.
Stir-fry rice and green onions.
Add seasoning mix (I bought at Bi-Lo) and 2 teaspoons soy sauce.
Stir-fry 1 minute.
Push rice to side.
Add eggs and scramble.
Stir into rice.
Add peas and carrots and meat (optional) and heat.
Makes 5 servings, about 1 cup each as prepared.
