Fresh Squash Casserole is an moderately easy dinner. Made with 3 c. zucchini or yellow squash, sliced, 1/4 c. onion, chopped, 4 tbsp. margarine, 2 eggs, beaten and 1/4 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350Β°. Saute squash and onions with the margarine until tender.
Add eggs, milk, salt and pepper.
