Fresh Pesto
Fresh Pesto is an easy dinner. Made with 2 c. fresh basil leaves or parsley or spinach, washed and drained, 2 garlic cloves, 1/2 c. walnuts, 3/4 c. parmesan cheese and 2/3 c. olive oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine fresh leaves and garlic in a food processor.
Blend into a fine paste, scraping sides often.
Add walnuts and cheese. Process until smooth, but slightly grainy.
Pour olive oil through feed tube slowly with machine running.
Mix until smooth.
Makes about 1 1/2 cups.
Use within one month.
Store in refrigerator.
