Fresh Country Peas
Fresh Country Peas is an moderately easy dinner. Made with 2 c. shelled peas (about 2 lb. fresh peas in the pods), 1 large onion, sliced, 2 tbsp. water, 2 slices bacon, cut into 1-inch pieces and 1 tbsp. margarine or bacon fat, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Quart microwavable casserole, combine peas, onion and water.
Cover; microwave on High 6 to 9 1/2 minutes, or just until vegetables are tender; set aside. In microwavable microwave until crisp; drain. Discard fat if using margarine.
Otherwise, leave 1 tablespoon fat in bowl; flour and into margarine or fat. Stir in broth smooth.
Microwave sauce on High 1 to 2 minutes or until thick, stirring every 30 seconds. Drain water from vegetables and add sauce; toss to coat.
Spoon into bowl; sprinkle with cooked bacon. Serves 4.
