Preheat to 425Β°.
Melt chocolate gently with the water in double boiler over hot (not boiling) water. Should be done very slowly.
Remove melted chocolate from heat and stir in the flour, butter.
Beat the yolks lightly and whisk into chocolate mixture gradually.
Beat the whites until they hold a definite shape but are not dry.
Fold into chocolate mixture.
