Freezer Tomato Sauce
Freezer Tomato Sauce is an moderately easy dinner. Made with 20 large tomatoes, washed and cored, 4 large onions, chopped (4 c.), 4 large carrots, shredded, 1/2 c. chopped parsley and 3 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut tomatoes into chunks.
Mix all ingredients in large kettle.
Bring slowly to boiling, stirring often.
Lower heat; simmer 30 minutes or until mixture thickens.
Cool slightly, then measure 3 cups at a time into blender.
Cover and blend until smooth, about 1 minute.
Pour into Ziploc freezer bags.
Makes 16 cups.
Freeze.
Good for soups and chili.
