Freezer Tomato Sauce
Freezer Tomato Sauce is an moderately easy dinner. Made with 20 large tomatoes, washed, cored and cut into chunks, 4 c. onion, chopped (approximately 4 large), 4 large carrots, grated or shredded, 1/2 c. chopped parsley and 3 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place tomatoes in a 12-quart pan.
Add onions, shredded carrots, parsley, sugar, salt and pepper.
Bring slowly to a boil, stirring often.
Lower heat and simmer 30 minutes.
Cool slightly. Measure 3 cups at a time into blender.
Cover blender and blend at low speed for 1 minute.
Sauce may be thawed and used over pasta, meat or in any dish requiring tomato sauce.
Keeps 1 year in freezer.
