Fred'S Favorite Cornbread is an easy dinner. Made with 2 c. self-rising corn meal, 2 c. buttermilk, pinch of salt, pinch of sugar and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 375 degrees.

Mix above ingredients thoroughly. Heat 1 tablespoon bacon grease in heavy black skillet.

Pour 1/2 of the heated bacon grease into bread mixture, leaving remaining grease in skillet.

Sprinkle hot skillet with a little corn meal. Pour batter into skillet.

Bake at 375 degrees for 30 minutes or until golden brown.

(I brush the top with butter during the last 10 minutes of cooking time and, if necessary, put under the broiler until top is golden brown.)

Let cool for 5 minutes.

Slice and serve.
