Flounder Fillet
Flounder Fillet is an easy dinner. Made with 1 lb. small flounder fillets (6), fresh lime wedges, 1/4 c. mayonnaise, 1/4 c. grated parmesan cheese and 1 small or medium scallion or onion, minced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a foil-lined pan, arrange fillets in a single layer.
Sprinkle the juice from the lime over the fish. With a fork, whisk together mayonnaise, Parmesan and scallions; spread over fillets.
Broil about 6 inches from high heat until fish is opaque when flaked with a fork and topping is golden, about 6 minutes.
Remove fillets to hot dinner plates and serve at once. Serves six.
