Fish Stew
Fish Stew is an moderately easy dinner. Made with 1 (16 oz.) can mackerel, cut into chunks, 3 medium onions, chopped, 6 medium potatoes, cubed, 2 (16 oz.) cans tomatoes, chopped and 1/2 to 1 tsp. crushed red pepper, this recipe delivers authentic, satisfying flavors. Cook onions and potatoes until almost done.
Drain excess liquid, leaving enough to cover vegetables.
Add mackerel, tomatoes and seasonings.
Bring to a boil.
Reduce heat.
Stir. Crack open eggs and drop in a circle in stew.
Do not stir! Simmer 20 minutes.
Serve hot.
