Finnish Summer Soup
Finnish Summer Soup is an moderately easy dinner. Made with 2 c. water, 4 to 6 potatoes, peeled and halved, 6 small boiling onions or 6 green onions, cut in 3-inch pieces, 12 very small carrots and 1/2 lb. fresh green beans, this recipe delivers authentic, satisfying flavors. Heat water to boiling in 5-quart pan.
Add potatoes.
Reduce heat.
Cover and simmer for 5 to 8 minutes.
Add onions, carrots, green beans and garlic powder.
Add basil, if desired.
Add margarine; simmer for 8 to 10 minutes more.
Add peas and cook for 2 to 4 minutes or until they are crisp-tender.
