Filet Mignon A La Cajun is an moderately easy dinner. Made with 1 1/2 lb. lean ground beef, 2 eggs, beaten, 1/2 c. quick cooking oatmeal, 7 strips bacon (uncooked) and 1 large onion, chopped fine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix first 3 ingredients; add rest of ingredients, except bacon and onion.
Shape into 6 or 7 patties; wrap each patty in bacon, secure with toothpick.
Brown on both sides in small amount of oil.
Add chopped onion and 3/4 cup water.
Cover and cook 30 to 45 minutes, adding water if necessary.
