Feather Bed Potatoes
Feather Bed Potatoes is an moderately easy dinner. Made with 6 large potatoes, 2 tsp. salt, 2 tbsp. melted butter (i use more), 1 egg and 2/3 c. thin cream or evaporated milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

π¨βπ³ Instructions
Cook potatoes until tender; drain and mash.
Add 2 teaspoons salt, butter and eggs, mixed with cream or evaporated milk.
Whip until fluffy.
Place in 3-quart baking dish.
Whip cream until stiff.
Add 1/2 teaspoon salt and pour over potatoes.
Top with grated cheese and brown in hot oven at 425Β°.
