Favorite Peach Cobbler
Favorite Peach Cobbler is an moderately easy dinner. Made with 1 1/2 lb. fresh, ripe peaches, peeled and sliced (about 3 c.), 3/4 c. sugar, 1/4 tsp. ground mace, 1 c. flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In medium bowl, toss peach slices, 1/4 cup sugar and mace to mix well.
Set aside.
In second bowl, combine flour, remaining 1/2 cup sugar and baking powder.
Stir in milk and eggs, mixing just until blended.
Place butter in a 9-inch square baking pan and place in 375Β° oven until melted and hot.
Remove pan from oven and immediately pour batter over butter.
Spoon peach mixture evenly over batter.
Bake 40 to 45 minutes, until puffed and brown.
Serve warm, topped with vanilla ice cream, if desired. Makes 6 to 8 servings.
