Exotic Chicken Salad
Exotic Chicken Salad is an moderately easy dinner. Made with 4 to 6 lb. cooked chicken breasts (12 breasts), cubed (2 qt. cubed turkey can be used), 2 (12 oz.) cans water chestnuts, drained, 2 c. finely chopped celery, 3 c. toasted slivered almonds, divided into 2 c. and 1 c. and 3 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Wash grapes; dry.
Dice water chestnuts.
Mix with chicken; add celery, grapes and 2 cups almonds.
Blend mayonnaise, lemon, curry and soy sauce.
Combine with chicken mixture and chill for several hours in large glass or steel bowl.
Place serving on lettuce leaf; sprinkle each with reserved cup of almonds and pineapple chunks.
Serves 12.
