Excellent Zucchini Bread
Excellent Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 3 c. sugar, 1 c. vegetable oil, 2 c. zucchini, grated (unpeeled) and 1 tbsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat eggs for 2 minutes until light and foamy (speed 4 or medium).
Add sugar, vegetable oil, zucchini and vanilla.
Turn mixer on Stir speed (low) and mix until well blended, 1 minute. Stir all ingredients together.
Add dry ingredients to bowl, use Stir speed for 1 minute.
Add nuts and raisins (optional).
Grease two loaf pans (8 1/2 x 4 1/2 x 2-inches).
Bake at 350Β° for 1 hour.
