Escalloped Eggplant Au Gratin
Escalloped Eggplant Au Gratin is an moderately easy dinner. Made with 2 c. soft bread cubes, 1 large or 2 small eggplant (approximately 1 1/2 lb.), 1/2 c. melted butter or margarine, 2 eggs, slightly beaten and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Peel and cube eggplant.
Cook in salted water until soft. Drain well; add bread cubes, butter, eggs, salt, pepper and all but 1/2 cup of cheese.
Sprinkle half the fine bread crumbs over bottom of buttered baking dish.
Add eggplant mixture.
Cover with remaining bread crumbs and cheese.
Cover with lid or foil and bake 30 minutes at 375Β°.
Remove cover and brown for 5 minutes.
