Enchiladas
Enchiladas is an moderately easy dinner. Made with 1 lb. beef, 1 c. onion, 1/2 lb. shredded cheese, 1 c. ro-tel and 1 c. canned tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown meat and onion until done; drain and set aside.
Mix tomato paste and chili mix.
Cook 10 minutes.
Remove from heat and cool.
Dip tortilla shell in sauce.
Put a tablespoon of meat and cheese.
Roll up tight.
Place seam side down.
Top with rest of sauce.
Cover with foil.
Bake at 375Β° for 25 minutes.
Uncover and sprinkle with rest of cheese.
