Enchilada Casserole
Enchilada Casserole is an moderately easy dinner. Made with 1 onion, chopped, 1 clove garlic, minced, 1 green pepper, chopped, 1/2 c. mushrooms, sliced and 1 c. tomato sauce, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onion, garlic, green pepper and mushrooms until onions are transparent.
Add tomato sauce, chili powder and beans.
Heat through.
Stir yogurt and cottage cheese together.
In a 1 1/2-quart nonstick casserole, put a layer of sauce.
Top with yogurt mixture.
Bake at 350Β° for 15 to 20 minutes.
Serve hot. Serves 8.
