Enchilada Casserole
A stovetop ground-beef enchilada bake of chili-spiced meat, corn tortillas, onion, and grated cheese in a quick chile gravy. Tex-Mex weeknight territory.

Brown meat and add next 4 ingredients.
Blend and cook for 5 minutes.
Add 4 cups of water; mix and boil for 10 minutes.
In a saucepan, add just enough butter or margarine to fry tortillas, about 3 seconds each.
Layer in Dutch oven tortillas, meat mixture, onions and cheese (3 or 4 layers).
Bake at 325Β°, uncovered, about 40 minutes.
