Encharitos
Encharitos is an moderately easy dinner. Made with 1 to 2 lb. pork chops or as much desired (save scraps), 2 to 3 lb. ground beef, 2 to 3 small cans chopped green chiles, 2 to 3 cans chopped tomatoes and green chiles and 1 to 2 cans mild enchilada sauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Encharito Sauce
Cut meat off pork chops and cut up into bite-size pieces.
Boil bones in seasoned water.
Cook pork in small amount of oil and water and season until lightly browned. Add enchilada sauce and equal amount of pork broth or a little more.
Add 1/2 to 1 can of green chiles.
Simmer for a short while, then thicken slightly with cornstarch.
