Elisabeth's Lemon Chicken
Elisabeth'S Lemon Chicken is an moderately easy dinner. Made with 1 whole chicken, 1 lemon, 1/4 c. olive oil, 3 cloves garlic and 2 tsp. dried basil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In blender, combine juice of lemon (save the rind), olive oil, garlic, basil, thyme, brown sugar, salt and pepper.
Blend until smooth.
Place chicken in a plastic bag.
Pour "goop" inside and outside of chicken.
Shove the rinds inside the bird and seal bag with twistie.
Refrigerate for at least 1 day, but 2 is better. Remove rinds and place in roasting pan.
Pour remaining marinade over chicken.
Bake in 400Β° oven for 45 to 60 minutes.
Skim fat and pour goop over chicken and serve.
