El Dorado Casserole
El Dorado Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 2 tbsp. onion, 1 small can sliced black olives, 1 c. sour cream and 1 small can ortega chopped green chilies, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown, then drain the ground beef.
Add onion, garlic, salt, tomato sauce and olives.
Simmer for 10 minutes.
In separate bowl, blend cottage cheese, sour cream and chilies.
Crush chips.
Place 1/2 chips in buttered casserole.
Add 1/2 meat mixture.
Top with cheese.
Layer until all is gone, but be sure each layer is topped with cheese.
Layer the cottage cheese mixture in, too.
Bake, uncovered, at 350Β° for 45 minutes.
