Eggplant Parmesan
Eggplant Parmesan is an moderately easy dinner. Made with 1 large or 2 medium eggplants, 1 medium log mozzarella cheese, 1 large can tomato sauce, 1 egg and 1 tsp. garlic, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Slice eggplant; dice 1/2 of Mozzarella cheese.
Mix egg with 1 cup or more milk, garlic powder and Mrs. Dash spice mix in soup dish.
Put bread crumbs on flat plate.
Dip eggplant in milk and egg mixture, then in bread crumbs.
While doing that, put oil in frying pan.
Heat oil on medium high.
When hot, put eggplant in pan and fry.
Let them cook until light brown on both sides. Continue until you finish frying the eggplant.
Place oil in baking dish.
Then, in layers, place cooked eggplant, Mozzarella, sprinkle grated cheese, and 1 ladle of tomato sauce.
Repeat until all of the eggplant is used ending with a layer of sauce.
Bake in a 350 degree oven for one hour.
