Eggplant Casserole
Eggplant Casserole is an easy dinner. Made with eggplant, slices of mozzarella cheese and ragu spaghetti sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash eggplant and cut into 1-inch slices.
Sprinkle with salt and allow to sit for 1/2 to 1 hour in colander.
Squeeze water out of slices and pat dry with toweling.
Dip slices in seasoned flour and brown in frying pan.
Place in greased 9-inch square baking dish.
Top each piece with a slice of Mozzarella cheese.
Place a second slice of eggplant on cheese.
Pour Ragu spaghetti sauce over the top.
Bake at 350Β° for 45 to 60 minutes, covered for first 30 minutes.
