Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, peeled and cubed, 1 egg, beaten, 1 c. bread crumbs, 1 small onion, chopped and 3 tbsp. butter, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook eggplant in boiling salted water 8-10 minutes, drain.
Wash with cold water, drain.
Add remaining ingredients except cheese.
Add a small amount of butter on top of casserole.
Bake at 350 degrees for 30 minutes.
Remove from oven, sprinkle with cheese.
Return to oven until cheese melts.
