Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 medium eggplant, 1 (6 oz.) pkg. mozzarella cheese, diced, 2 eggs, beaten, 1/2 c. oil and 1/2 c. bread crumbs, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Peel the eggplant. Cut into 1/2-inch slices. Dip in egg and bread crumbs.
Brown both sides.
Place 1/2 in casserole dish and top with cheese.
Add rest of the eggplant.
Bring sauce to a boil and pour over eggplant.
Add rest of cheese.
Cover casserole. Bake at 350Β° for 20 minutes.
