Eggplant Casserole

Made with 1 eggplant, peeled and diced, 1 green pepper, chopped, 1 small onion, chopped, 1/3 c. uncooked soy grits and 2 c. stewed or canned tomatoes, this recipe delivers authentic, satisfying flavors. Place a layer of diced eggplant in casserole.
Top with layer of green pepper and onion.
Sprinkle on the soy grits.
Top with rest of eggplant, pepper and onion.
