Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, 1 c. cheese, 1 c. saltine crackers, 2 or 3 eggs (depends on size) and 1 1/2 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel eggplant.
Salt and pepper; cut into squares.
Cook 5 or 6 minutes.
Drain.
Mix cheese, crackers, eggs and milk; stir thoroughly.
Bake in a greased casserole pan for 35 to 40 minutes at 350Β°.
