Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 c. cooked eggplant, drained, 1 chopped medium onion, 1 (no. 2) can drained tomatoes, 4 eggs and 1 c. buttered bread crumbs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in butter.
Mash eggplant and tomatoes, then add onion and eggs.
Stir until it looks like scrambled eggs.
Stir in cheese.
Add 3/4 cup of bread crumbs.
Pour into baking dish.
Add rest of bread crumbs on top.
Bake at 350Β° for 20 to 25 minutes.
