Eggplant Casserole
Eggplant Casserole is an easy dinner. Made with 1 eggplant, peeled and drained, 1 large onion, diced, 1 c. soft bread cubes, 3/4 c. grated cheddar cheese and 2 egg yolks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Medium saucepan, eggplant and onion for 10 minutes about 2-inches of water.
Drain thoroughly.
Beat egg yolks whisk, pour over bread cubes and gently mix and let for a few minutes.
Add cheese, egg yolks and bread to drained eggplant and onion.
Mix gently but well. Turn into greased x 8-inch pan.
Bake at 350Β°, uncovered, for 35 to 45 minutes, until lightly browned on top.
