Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, peeled and sliced, 1 1/2 c. saltines, crumbled, 4 eggs, 1/2 tsp. pepper and 1 stick margarine, melted, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook eggplant until mushy; drain.
Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and a small amount of margarine.
Mix well.
Pour into baking dish; sprinkle with remaining cheese, cracker crumbs and melted margarine.
Bake at 325° to 350° for 25 to 30 minutes.
