Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 lb. ground meat, 2 large onions, chopped, 1 bell pepper, chopped, 1/2 tsp. oregano and 3 eggplants, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Brown meat, onions and bell pepper.
Add tomato sauce and seasoning.
Allow to cook 5 minutes.
Slice and salt eggplants, then fry in a small amount of oil.
Arrange slices of eggplant and sauce alternately in casserole dish.
Bake at 350Β° for 45 minutes.
Whip eggs and cheese together.
Pour over casserole and bake an additional 15 to 20 minutes.
