Easy Spinach Soufflé

Oven to 400°.
Grease a 2-quart soufflé dish.
In a saucepan, combine mayonnaise, flour, onion, salt, nutmeg and pepper; constantly over medium heat for 1 minute.
Stir in milk smooth.
Stir constantly, cook until thick. Remove from heat. Stir in spinach.
Beat in egg yolks.
In a small bowl, beat egg whites with cream of tartar until stiff peaks form.
Gently spinach mixture.
Spoon into prepared dish.
Lowest rack of oven.
Reduce oven temperature to 375°.
40 minutes until puffed and golden brown. Serve immediately. Serves 4 to 6.
