Brown 2 cut up fryers in oil in a heavy skillet or Dutch oven. Drain well and blot dry.
Return to pan and add soy sauce.
Cook covered in oven at 325Β° (or simmer covered on top of range) for 30 to 40 minutes (until almost tender).
Add vegetables.
Cover and cook for additional 3 to 4 minutes.
Don't overcook vegetables; they should be Oriental-crunchy.
