Drunken Shrimp
Drunken shrimp are cooked shell-on shrimp briefly poached, then soaked in a Shaoxing wine marinade with ginger, scallions, soy, and chile for a fragrant Chinese appetizer or dinner plate.

Poach the shrimp in lightly salted water just until pink and curled, then drain.
Simmer Shaoxing wine, ginger, scallions, soy sauce, vinegar, sugar, and chile briefly to dissolve the seasoning.
Cool the marinade until warm but not hot, then pour it over the shrimp.
Let the shrimp soak until the shells take on the wine aroma.
Serve chilled or room temperature with cilantro and a little marinade spooned over the top.
