Double Chocolate Mint Chip Cookies

Heat oven to 375Β°.
Melt 1/2 package of mint chocolate chips in microwave.
Let cool to room temperature.
In bowl, combine flour, baking soda and salt; set aside.
In separate bowl, beat butter, brown sugar, sugar and vanilla until creamy.
Add melted chips and egg; beat well.
Gradually blend in flour mixture.
Stir in remaining chips and nuts.
Drop by spoonfuls onto greased cookie sheets.
Bake for 8 to 9 minutes.
Allow to stand 2 to 3 minutes before removing from cookie sheets.
Cool completely. Makes 1 1/2 dozen.
