Dixie House Baked Squash
Dixie House Baked Squash is an moderately easy dinner. Made with 2 lb. yellow squash, 1/4 c. finely chopped onion or 1 tbsp. dehydrated onion, 2 tbsp. butter or margarine, melted, 1 c. dry bread crumbs, divided use and 1 1/2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Rinse and trim ends of squash.
Cut squash into 2-inch pieces.
Boiling, salted water to cover.
Cook just until tender, minutes.
Drain in colander, mash to remove remaining liquid.
Drain for 10 minutes.
Preheat oven to 350Β°.
Fresh onions, saute in butter until soft, about 5 minutes.
Combine drained squash, onions, butter, 1/2 cup dry bread crumbs, sugar, salt, eggs and pepper.
Pour into lightly greased
1/2-quart casserole with remaining 1/2 cup bread crumbs.
Bake, covered, for 20 to 30 minutes or until set.
Remove cover and return to oven.
Bake until bread crumbs are golden, about 10 minutes.
