Diabetic Yogurt
Diabetic Yogurt is an moderately easy dinner. Made with 1 (4 serving size) pkg. jell-o sugar-free gelatin (any flavor), 3/4 c. boiling water, 1/2 c. cold water or substitute with 1/2 c. fruit juice, 1 (8 oz.) container vanilla low-fat yogurt and 1/2 tsp. vanilla (optional), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Completely dissolve gelatin in boiling water. Combine cold water and enough ice to measure 1 cup.
Add to gelatin and until slightly thickened.
Remove any unmelted ice.
Stir in yogurt and vanilla.
Pour into individual dishes and chill until set, about 30 minutes. Makes 2 1/2 cups of 5 servings.
