Diabetic Holiday Cake is an moderately easy dinner. Made with 1 (16 oz.) can fruit cocktail (unsweetened), 2 c. raisins, equal to taste, 1/4 c. butter and 1 c. unsweetened applesauce, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Drain fruit cocktail.
Reserve liquid.
Add enough water to reserved liquid to measure 2 cups.
Combine raisins with liquid in saucepan.
Cook until liquid evaporates.
Stir in Equal, butter and applesauce.
Let cool and pour into large bowl.
Add eggs, vanilla, spices and flour.
Stir in fruit cocktail and pecans.
Pour into greased and floured tube pan.
Bake at 375Β° for about one hour.
