"Detailed" Pumpkin Cheese Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 1 tsp. lemon juice, 2/3 c. pumpkin pie mix and 3/4 c. flour (plain), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat eggs on high speed for 1 minute. Gradually add sugar, lemon juice, salt and soda.
Fold in flour and pumpkin pie mix. Spread on a cookie sheet that has been thoroughly sprayed with Pam or Mazola.
Sprinkle the nuts on top. Bake at 375Β° for 10 to 12 minutes. (Do not overcook!)
Turn out on a kitchen towel that has been well coated with powdered sugar.
Sprinkle powdered sugar on top of pumpkin bread before you roll.
Roll like a jelly roll and set aside to cool.
When cool, unroll and spread with filling. Spread filling to within 1/2-inch of edges.
