Date Pecan Cake
Date Pecan Cake is an moderately easy dinner. Made with 1 qt. pecans, 1 lb. dates, chopped, 4 eggs, 1 c. sugar and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Sift dry ingredients 2 times. Remove small amount to mix with pecans and dates. Set aside. Beat egg whites, set aside. Beat egg yolks and sugar gradually, mix well. Add dry ingredients, vanilla, nuts and dates. Fold in egg whites. bake 350Β° in tube pan for 1 hour.
Soak lint-free cloth in blackberry wine. Wrap cake when cool. Store in airtight container 2-3 weeks. If cloth gets dry add small amount wine.
