Date and Nut Tiffin Loaf
Date And Nut Tiffin Loaf is an moderately easy dinner. Made with 3/4 c. sifted flour, 1/8 tsp. salt, 3/4 c. sugar, 1/2 tsp. baking powder and 1/2 lb. pitted dates, cut in thirds (1 1/3 c.), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Sift dry ingredients.
Add dates and nuts.
Mix with fingers until well coated.
Add beaten egg yolks and vanilla and blend with fingers.
Mix in stiffly beaten egg whites.
Brush loaf pan (9 x 5 x 3-inch) with butter; flour lightly and add batter, smoothing it with your hands.
Cover top of pan with foil, folding around the edge of pan.
Bake at 275° for 1 3/4 hours.
Remove foil and increase heat to 325°.
Let remain in oven 10 to 15 minutes longer or until top becomes faintly brown.
Remove from oven and let set 5 minutes.
Loosen with dull knife.
Turn upside down on cake rack.
When cool, wrap and store or freeze.
Slice thinly.
