Date and Nut Meringues
Date And Nut Meringues is an moderately easy dinner. Made with 3 egg whites, 1/4 tsp. salt, 1 3/4 c. xxxx sugar, 1 tbsp. flour and 2 c. broken pecan meats, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Add salt to egg whites.
Beat to a stiff foam. Add sugar, sifted with flour, one tablespoon at a time.
Continue beating until dry and stiff. Fold in nut meats and dates.
Add vanilla. Drop from teaspoon on aluminum foil or unwaxed paper, 1/2 teaspoon in rounds. Bake in slow oven at 300Β° for 25 minutes. Turn over aluminum foil and cool.
Peel off. Store in tin box.
Yields over 2 dozen.
