Dandelion Salad
Dandelion Salad is an moderately easy dinner. Made with 2 eggs, 5 slices bacon, 1/2 c. cream, 4 tbsp. vinegar and 1 lb. young dandelions (non-flowering stage), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Wash and dry dandelions.
Place in bowl and let stand in a warm place.
Fry and dice bacon.
Drop the bacon with drippings on top of the dandelions.
Mix butter and cream and melt slowly. Beat the eggs; add salt, pepper, vinegar and sugar.
Pour into the frying pan and cook until it thickens like a custard.
Pour this smoking hot over dandelions and stir well.
